The Incredible ‘blind’ cook, Penny Melville-Brown, welcomes in the New Year with this recipe for Tomato Soup.
Tomato and orange soup
Ingredients:
1 large (800g) tin tomatoes.
1 orange, zest and juice.
1 medium potato, peeled and chopped.
2 teaspoons sugar.
Salt and pepper to taste.
Method:
Place all the ingredients in a saucepan and simmer gently until the potato has cooked and is thickening the mix.
Blend until smooth and adjust seasoning and sweetness before serving.
My Tips:
A little sugar helps balance the flavours.
Wash out tin and keep for other important uses (melting wax, plant holder, 2 tins and a piece of string …)
